Recipe of the Month: PrOat Muffins

Adventures with the Magic Bullet continue. I used it to make out flour out of my oatmeal, then used the flour to make these protein+oat muffins. Yes you could buy oat flour, but it’s pricey. I also used the Magic Bullet to make the third ingredient, puréed apple. Yes, you can buy cheap apple sauce. But why, when you can quickly blend one up! Fresher!

I’ve already added these bad boys, and a vanilla version, to My Fitness Pal! Ingredients, directions, and macros are below. Enjoy!

Ingredients for Plain (lower-carb) Muffins:
  • 2 scoops multipurpose Quest protein powder
  • 1 puréed apple
  • 1/2 cup oats ground into oat flour
  • Water
  • 1.5 -2 tsp double acting baking powder

*Additions you can play with: I’ve played with the following flavor tweaks maple extract and monk fruit; cinnamon; and chocolate extract and monk fruit. All are great. Pick one that you like best! Start with about 1tsp of extract and 1tbl monk fruit. You’ll want to taste the batter to see if you need more (or less). It will depend on the sweetness of the apple you use and your personal preferences.

Ingredients for Vanilla Muffins:

All of the original, except you’re using 2 scoops of Quest vanilla protein powder. When using this, you will not need any monk fruit, even if adding extracts. The protein powder is might sweet.

  1. Using the Magic Bullet, or something similar, blend the oats into out flour.
  2. Add the oat flour to a mixing bowl.
  3. Purée the apple and add it to the oat flour.
  4. Add the protein powder, extract, monkfruit (if using), and baking powder.
  5. Beat the ingredients together on low.
  6. Slowly beat in the water until you get a cake-batter like mix.
  7. Spoon the batter into a 12-count muffin pan (spray first with cooking spray).
  8. You should have enough batter for 12 muffins.
  9. Bake at 350 for about 10 min, or until slightly brown.

1 serving is THREE muffins!
